Recovery & Update

Hellllooo bloggies! How's the weekend treatin ya? I am feeling pretty awesome this morning. I had my knee surgery on Thursday, so I've been taking long naps (and painkillers) and discovering why I don't really watch much TV (how is it that nothing is on when there are hundreds, even thousands of channels?). I think all of the anesthesia is finally gone because I can finally focus on things again! It was getting hard to read for awhile. So last night for dinner my amazing husband made me this (based on my directions :) haha):

raw vegan veggie sushi! with jicama rice! he did the *rice* in the dehydrator and everything (he'd never so much as turned it on before). I was uber-impressed. He has also been making me green juice (my recent favorite, from the Fitnessista - 2 stalks celery, handful spinach, 1" chunk ginger, 1 lemon, 1/2 green apple, 1/2 pear, 5 leaves romaine, 1 cucumber, handful spinach):

This pink beauty was frozen sweet cherries, pear, green apple, strawberries, and a touch of honey.
what more could a girl ask for? he learned that the magic dish fairy is on hiatus! haha... He tells me yesterday, "I feel like I haven't stopped doing dishes" - yeah baby, welcome to my world!

Sorry for my long absence from the blogging world! I was super-busy pre-surgery; we had a wedding to go to in Tallahassee - the bride was one of the most beautiful I have ever seen. The dinner was buffet style and mostly meat but they did have a variety of olives, veggies and fruit - and some super delicious pineapple, so I was a happy camper :)

Recent eats have included grilled eggplant with homemade marinara sauce -



not raw, but vegan ... after seeing this post on Mama Pea's blog, I had been craving eggplant parm... so good! I followed Mama Pea's directions for marinating and grilling the eggplant (I grilled it on a non-stick indoor griddle) and it was awesome. Thanks Mama Pea! I had the leftover eggplant on a salad the next day and it was even better. For the marinara, I sauteed half an onion and a few medium garlic cloves (finely chopped) in a few tablespoons of olive oil until translucent, then added a large can of crushed tomatoes. Season with salt, pepper, and italian seasoning, and let simmer for 10-15 minutes. You can add other seasoning (extra parsley, oregano, etc, depending on what your Italian seasoning has in it), and you can spice it up with crushed red pepper flakes (I do!). Super easy. Or you can you use jarred organic. Whatever works. I had it over spiralized zuke noodles:

that my pal Averie recommended. For $30 from Amazon, I can't think of a better kitchen investment - easy to use, easy to clean, and super fun! I imagine that for older kids, you could get them in on the action too!
We tried this recently too:

The box says it's 'vegetarian' but the ingredients make it seem vegan...? it was not too shabby for soup in a box! smooth and creamy, but no cream in it. I liked it for an occasional treat, but as the weather warms up, I don't really crave warm soups.

Hi Kat, so glad you got the spiralizer!! Isn't it the BEST thing, for $30 bucks, ever!! I love it.

Great job on the e'plant parm. I am horrible w/ eplant, I always overcook it! Yours looks amazing as does your marinara and raw zuke nood dish!

awww thanks - you totally just made my day :)
I hate it when I overcook stuff, so I usually err on the side of undercooking... eggplant is okay if you do that with because it will absorb all the extra sauce n' stuff anyway - yum!

Well, tomorrow I'm supposed to get sushi with my friend tomorrow, and I'm REALLY nervous about eating in front of them.
I know, it's a ridiculous thing to be nervous about, but he is like a table manner god and it's really difficult to eat sushi.
